Tried something different. Got maters, no corn meal, but do have Ma Se Ca corn flour for tortillas. Made the FGT, but what to do with the leftover dredge?
Sopes, mozzarella, and avocado.

Not bad!

that works for me. Great idea, and a wonderful blend of flavors and textures.

Next time I do it I will have to make up a crema-lime sauce to top it with. Maybe some chile and cilantro in it too.

Man I do love FGT's. Had one on a brisket burger the other night with jalapeno pimento cheese. It was uber.

It gave me the idea of making a FGT recipe with a light and spicy pimento cheese sauce that I'm going to trial on Fathers Day. My Dad will be my biggest critic but I think I can pull it off.

Thanks for sharing Sean!
