I'm weird, I guess. I like to make certain things generally considered dead of winter food right slap in the hottest part of the summer. These were more Hungarian style. With 3 large carrots, 3 stalks of celery, Cumberland Gap smoked ham, 2 large onions, crushed tomatoes, lots of garlic, paprika, thyme, cumin, and parsley, 2 cups chicken stock, 2 cups water, 3 tbsp of red wine, and a generous splash of Yucateco red Habanero hot sauce.

Lentils with pork neck bones. Not so many carrots. *( I prefer my carrots shredded rather than chunked ) Onions, garlic. Other seasoning - dry mix of various vegetables and spices *( Mrs Dash ), olive oil. Maybe some shallots or spring green onions, or celery. Other spices work too, Mediterranean mix, Italian mix and more but not all together and not too much. Season with "Sazon Goya" with Culantro and Achiote. http://latinfood.about.com/od/seasoningmarinade/p/What-is-achiote.htmIt's Latino, yellow powder in little envelopes. Common in Supermarkets. Use 1 envelope. https://www.google.com/search?sourc...a&gs_l=hp....0.0.0.2759...........0.Just boil a pot of water about 1/4 full. I use a rice cooker, 30 minutes. Lentils cook fast. Last few minutes add fresh spinach Just wilt it, don't overcook. Then sprinkle bowl or plate with drops of vinegar of various types including balsamic. The pork neck bones are absolutely delicious, tastiest ever. Pork shoulder works too but not as well as neck bones. There are also French lentils and black lentils, smaller and longer to cook, but the common brown are best.
