My buddy gave me a bunch of these that he grew in his garden. They're fresh green Fresno chile's. So I turned em' into a big batch of fresh Pico de Gallo. And a bunch of fresh Ninfa's Green Sauce. Both of these are simply fantastic with good, fresh tortilla chips.
Every day on this side of the ground is a win.

3 avocados 3 tomatoes (less ripe, even green is fine), cut into chunks 4 tomatillos, cut into chunks 3 tbls minced garlic 1 handful cilantro leaves 7 or 8 chile's (jalapeños are fine, but use what ya' like), I like to de-seed em' and cut em' into chunks 16 oz tub of sour cream salt
Peel the avocados and put em' in a blender with the cilantro leaves
Boil, over medium heat, the tomatoes, tomatillos, garlic, and chile's, for 15 minutes while stirring occasionally, don't scortch it, and don't add any liquid
Put all of it in the blender with the avocados and cilantro leaves, and salt
Blend until smooth, then pour in a large bowl and fold in the sour cream and mix it all up well.
Refrigerate, then make a pig outta yourself eating it with your favorite tortilla chips
You can give or take on any of the ingredients to suit your taste

what in the heck is that stuff? Ninfa's is a mexican restaurant down on the Houston Ship Channel that's famous for their good food, and especially their green sauce.

Nice. I just returned after a few months at my place in N Idaho. The local Yoke's had fresh Hatch green chili's so I made a pot of chili verde. KILLER.

Sounds good dude.
Make ya' some good green chile sauce outta fresh roasted green chile's, put your favorite home grilled hamburger (fixed just the way you like it) in a deep dish plate, and drench that mo' fo' with the green chile sauce. Top with slices of avocado and some grated cheese. That's the famous Pueblo slopper. Eat it with a fork, and a spoon...!

Just gettin' started. Tomatoes, green onions, white onions... Added serrano's and cilantro... Then added Fresno's, jalapeño's, and lime juice. I've been a dicin' mo' fo'...!
