Hi all,

We were just out on Vancouver Island for vacation and got some Chinook salmon fishing in. When cleaning the fish I noticed that one of them had quite pale flesh, almost the color of a walleye or pike fillet. Is this common? I'm assuming that it is a result of diet? All the others were the typical coloration.

I've heard various things about white chinook, but here's an article that says its an inability of some of them to process the pigments in their diet.

Perfectly good to eat and some claim they are superior.

458 is right. You caught a white king. We usually catch a couple a year in WA. They are perfectly fine and taste the same IMO.

Common in the Frasier river system.

Some say they're better, some say they're worse. I say you won't tell a difference. They typically run pretty big, at least where I fish.

Thanks guys. We caught 8 Chinooks, 4 pacific cod, and a spiny dogfish on a 5 hour outing. The biggest Chinooks were 17lbs. My wife had one on that got the guide excited but he got to the surface and the hook popped out. This was our first time fishing for Chinooks. We caught sockeye and coho last year. I would go after Chinooks again!

I like white kings. Seems the lighter colored the flesh, the better tasting. But I'm sure that is subjective. Light orange fleshed king is great.

I try to pay attention to the factors which are most likely to attract flies when we dry fish; things like bruising - obviously, but also whether the fish is in rigor or past when we hang them, the general condition of the flesh, etc. One of the things I’ve also noticed is that when we get the fiery red-fleshed chums, they seem to be more inclined to attract flies. I suspect their flesh reflects their diet, and something about that makes the flesh begin the decomposition process at a faster rate, or some compounds present are attractive to flies.
