Smoked some spare ribs yesterday and made what may be the best batch of cole slaw I've ever made. Mixed some mango nectar in when I sauced the ribs with Sweet Baby Ray's. I spritzed the ribs about every hour with apple juice and filled the water tray with Ting (a Caribbean lemon lime graprefruit flavored soft drink) and a little apple juice.

Made a barbecue pork sammich for lunch today with the sauce with mango nectar again. Whoever thought of the cole slaw on a sammich should be crown prince. grin

We had elk roast, carrots, potatoes, and onions.. Should have taken a photo.. But we were hungry!!

MM, Pretty much your basic, except I was out of a couple things and that got my mind working. (No Coronas yet). Probably good that you're forcing me to remember. smile

I medium to large head of green cabbage shredded
I small to medium head of red cabbage shredded
2 slices off a large red onion chopped
1 large carrot finely chopped
1/3 stalk of celery finely chopped (didn't have celery seed; probably a good thing, looking back)
Used half and half, instead of milk and/or buttermilk. about 1/3 to 1/2 cup (All I had was skim and no buttermilk)
2 tbsp white vinegar
1/3 cup of sugar (thought it was too much, but I didn't have it mixed well enough yet)
1 - 1/2 cups Hellman's mayo (I'm sure Dukes would work, too)
2 tsp kosher salt
fresh ground pepper
juice of 1 lime
1 handful of fresh cilantro chopped

If I had to put my finger on what made it different and good, I'd say using less liquid and using half and half, lime instead of lemon, celery instead of celery seed, and the cilantro were the difference.

Yesterday we visited some old friends from our Midland days at their place on Lake LBJ. A starter of jalapeno/cheese sausage, ribeyes, potato salad, mixed green salad and pinto beans. The meat being grilled over mesquite. He nailed the steaks.

I've had some stuff come off the smoker at pretty weird hours sometimes but it's usually me and muttly so no big deal. Now I just figure in my serving time and work backwards from that point.

Small butt came off @ 0130hrs last night but after pulling and resting all night with a finishing sauce and reheating the PP sammies for breakfast grin were mighty good.

Brought home a bunch of buffalo steaks from the ranch several weeks ago. So I pulled out a big round steak tonight and chicken fried it a heart healthy cast iron fryer of pure hog lard! Damn was pretty tasty. I had leftover buttered potatoes and english peas with mine. Wife had ziti pasta with hers.

Beth and I did a canner full of cabbage stuffed Hungarian wax peppers two weeks ago, they are edible. grin mom wants to give me a half bushel of peppers to do more, not sure we want to tackle a whole days worth. Would like them on the shelf though. Probably gonna.
