I got my meat back from Uvalde last week. They did a real good job and the lady I dealt with was extremely nice. Everything was vacuum packed and in Styrofoam coolers with dry ice. The dry ice was all but gone, but the meat was still frozen. That's got to be the leanest pork I've ever had before.

Brian how much did it cost for the processing and shipping?

I'm not sure about the shipping, it was about 60 lbs., but the meat was $285.00. The turn around was partially my fault. I got a new phone right before the hunt. She called me and left a message on Tuesday after we got home and I never got the message for another week when I figured out how to use this phone. They cut it up right away, but the sausage took another week. I thought it was long, but she said they were waiting for the sausage to get done. I had all three pigs done, but because they were small, I just had a roast off of each ham, the back straps, and then ground the rest. I had them make me 10 pounds of Italian, and the rest made into breakfast sausage. I've only tried that piece of back strap and the breakfast sausage so far. It's extremely lean and tastes great. It's probably expensive as far as pork is concerned, but we're probably set for a while. It's a fun thing to do. What the hell, it's only money. If you only knew what I'm getting ready to fork out to the governments, this money is like a grain of sand on a beach.

Ditto. Was a great getaway, and appreciate it takes some selfless legwork to get it arranged for all, so whatever we can do (or not do) that's helpful please let it be known.

Have a suspicion it was that damn vegetable-and-gourd-based adult beverage being passed off as "beer" that's the issue. That'll get you kicked out of a right proper establishment, alright. Blasphemers and philistines.

p.s.shipping was steep, but hey, the meat is great and the trip was memorable good fun.

Just had another rack of ribs last night. They are good. Plan on shooting 3 more of the 60lbers next year. No more dinks or jumbos for me.

Mine were delicious. so good that the wife, who adores her father who in turn loves wild game, gave all the meat to hi. so I do not get to taste the gamut of various ways to marinate and stir fry wild pig in different Cambodian dishes. Maybe next year.

Thanks again guys for tolerating my family and treating them so well. I have a green light to go hunting because of you.
