Tamales with fresh made Red Chili Sauce.

Tamales were from Costco, not real ones.

Not bad though.


Some spelling errors can be corrected by a vowel movement.

Last night, speed goat seared in butter with a salad and gin with cranberry to wash it down.
Tonight, ribeyes.


Sour cream does not scare me, great looking tacos.

Wish I could say I harvested it, but no. Our club had the annual wild game feed a couple of weeks ago and there was a lot of meat that just didn't fit the menu or number of people that attended. When the night was over we had made eighteen or nineteen different dishes and had to tell people we had two ice chest with thawed meat, take what you want.

I chose some cryovaced goat steaks! There was only two packages with three steaks each.

Shrimp tacos are one of my favorite all time comfort foods!

Throw in the skirt steak and it's a win win!

I make a cilantro-lime-cream sauce that would look real good on top of those with some of my also made from scratch pepper sauce.

Had chicken fajitas last night. Lots of sautéed onions & sweet peppers.

added a couple of slices of ripe tomato & some "mezican" cheese.

For something so simple, the flavours were great.

Tonight: homemade brats poached in chicken broth with red potato salad and a few bottles of Shiner bock.

Tomorrow: Steak de poulet frit under a creamy white pepper gravy and maybe a few sips of corn likker that has been aging in a 5 liter charred oak barrel for the last 3 years.Very smooth but still a bit young.

A friend owns a micro distillery and we have been playing around with a "rapid aging" process that has been very well received by his customers.
