I made pork souvlaki skewers and a rice pilaf.

Though I need to get an herb garden going again. Dried herbs just don't cut it Ike fresh herbs do.

Rosemary chicken with polenta and a green salad.
A little heavy on he salt in the polenta, but it didn't stop me!

Night before last. Fish, shrimp, scallops and broccoli casserole. My P-R-P cheese crust with a layer of fresh cilantro underneath. Delicious. Made a big enough batch to spread some joy.

Last Night;

This is the left overs from 2 Roasted Chickens (meyer lemon & fresh poultry seasoning herbs inserted into cavity) & a mess of roasted root veges.

Succulent & tasty !

Monday night was prosciutto pizza with difference.

Did not have fig preserve, buffalo mozza & the arugula had taken a turn for the worse.

So instead of the above, base was spread with mango habanero spread & dotted liberally with feta. This was cooked off in a 500* oven for 15 minutes untl crust was well set & the feta had started to colour up.

Pull from oven & drape with prosciutto & grate fresh parm on top.

Experiment worked well !

I'm pretty new to making fajitas as all the slicing with one hand is a PIA so I break out the electric knife. It's a game changer, Also been using store bought seasoning mixes.

Can to share your seasoning blend ?

No need for a photo shoot to be a great post.

One each Red onion, red and orange bell pepper, pasilla pepper. Garlic, chile powder,cumin, salt and pepper. Sometimes a saranno and jalapeño, sometimes some cayenne. No hard and fast rules, Denny.

Thank you. You seem to be in tune with that style of cooking whereas I've only eaten it the few times I've been out west. Thus you folks and the internet are my only source.

Flour dusted pork loin chops and a green salad. Last night I went vegetarian with two artichokes. Busy weekend with a car show and a barbecue for the bench rest competition. Got to drive an LT1 powered '40 Ford coupe to and from.

Deep pit sammie, grilled asparagus/squash, and strawberry shortcake for the shooters.

Enjoying a cigar and cocktail with a freshly mowed yard in front of me. Hope all had a great weekend and a good Monday to come.

Tonight will be coriander/ginger/maple syrup canard sausages, and Merguez, North African lamb sausages, lovingly made by a dear friend of mine, Eric, who is both an amazing butcher and Chef. Serving them with grilled freshly picked asparagus and oven roasted grape tomatoes. A crusty loaf for soaking up the roasted tomato juices will be the perfect addition.

Tonight is a Swai fillet and green salad. Contest at work, ten dollar buy and weigh in, most weight loss by percentage over the next three weeks. Looks like a $200 pot and I'm down six pounds from Monday's weigh in. Wish me luck!
