cleaned a snapper over the weekend and i'm trying to decide if i should make turtle soup or if it would make a nice Gumbo option. any input or suggestions?

We have some huge snappers in our ponds but I don't have any idea how to go about preparing them or a recipe for soup as they're decimating the fish population.

Any help or links are appreciated.

I had googled turtle soup recipes and founf the one for Commanders Palace but i'm wanting to know if turtle makes a good gumbo as well. can't find too much about it being used in gumbo and maybe thats telling me something right there but thought i would see what others say that have had the experience.

I prefer Gumbo myself.

When we ate at CDR's Palace I had that soup and it was incredible. Let us know how it turns out.

If it ever stops raining,.... My yard guy saw one up at the smallest upper pond with a head about a 2X4 width.
