Red beans and rice has popped up here a few times so I'm wondering if anyone has an andouille sausage recipe they would care to share.

Emeril Lagasse's recipe is pretty staightforward but as is the case with many sausages a recipe can vary from region to region so I thought I'd ask.

Not a recipe Denny, but mathman did hook me up with Teet's Food Store when I was hunting down ingredients to make gumbo. Their andouille and tasso pork is the real deal, made by Cajuns for Cajuns. And I've probably taken several years off my life by eating their pork cracklins, but damn are they good!

Thanks for the link. It would be fun to taste some of the "real deal" as my exp. with andouille to date has been making it from pre-blended mixes from various online vendors.

They have a 30 buck minimum which is fair and good but after shipping four pounds will set me back $63.98 which is about what a 16.5lb brisket packer is going for in my area.

Despite your courtesy I'm gonna hafta pass. frown
