Seems simple enough, but search/test have not hit what I am looking for . . .

As a kid growing up a family friend taught me to make chicken curry as he learned in India in WWII.
As life happens an ex and years of not cooking it and now I have been unable to reproduce it

As I remember it . . .

Fry the chicken
Then place in a pot with curry powder and whole peppercorns.

Somehow you end up with a thin gravy and serve it over a bed of rice.

Seems simple, but I have never been able to find a recipe that sounds right or comes out as the way he taught me.

I know it was simple, but GREAT EATS

I make butter chicken which is a light curry, but it has quite a few ingredients in it, and I make a chicken korma which is a medium curry, and then I make a chicken curry that will leave behind trails of pain.

If you would like the recipes please let me know and I will post them here. I learned to make these recipes from one of my employers, she taught me in her own kitchen, she is of East Indian descent and has taught me the traditional way of Indian cooking. All three recipes are outstanding.

She has recently taught me her secrets to her Bombay Potatoes recipe, and Onion bhajis, and they are out of this world.

chicken, or any other curry, is about as nasty a dish as you can make. I never understood how anyone could stomach it.

I can't help with a recipe, but Indian food really demands good fresh spices as much of the flavor is lost with old spices as the aromatics evaporate. Get small batches of whole spices and grind them fresh for each dish, makes a big difference.

I start by marinating chicken (cut up thigh pieces) overnite in yogurt (greek) in curry spices heated in a pan and then fresh grind in coffee grinder. As mentioned above

I use a dutch oven- enamel or cast iron
I saute some finely cut onions, 1/2 cup, in clarified butter about 20 minutes. Remove from pan. Brown chicken for 10 minutes. I add a carton of low sodium chicken broth, add cooked onions. Some fresh curry powder, a bit of turmeric and a bit of fresh ground ginger. You can add some crushed tomatoes and/or potatoes and or fresh peas, coconut milk, and or garbanzos, golden raisons etc, Bake about 45 min in preheated oven around 325. Last 24 minutes uncovered

Serve with jasmine rice and some fresh cilantro on top.

Louis, Lynn asked me to get word to you that she will get those recipes to you soon. Her daughter has had some complications with her medical issues and she has spent the last two nights with her.

I'll add that any thoughts and prayers for Quinn would be much appreciated.

Do this one its fake ..but it taste goods ...I've have my share of India foods, never will miss it ...Cook 3 pkgs of top ramen at one time, with the seasoning pkts in 3 cups of water, until the water is gone. 2.finely chop up a regular yellow onion and saut� in 2 tbs of butter adding 1 tsp of curry powder about � way thru. 3. Add 1 can cream of chicken soup,1/2 cup mayo,1/2 cup milk,1tsp lemon juice and 2cups of cooked diced chicken heat thru , stir/mix. 4 place the noodles in a casserole and pour the curry & chicken mix over��u can give �the works� a little stir, serve it up---u ...its in the sticky up top with pics ...

The loss of any recipe involving curry should be considered a good thing.
