This is my favorite summer soup recipe;

Combine in a blender or food processor until smooth the following:

1 can of diced beets
1 can of beef consomme soup
1 can of cream of chicken soup
1 large dill pickle
1 cup sour cream

After blending, stir in a second can of diced beets and a jar of sweet and sour red cabbage.

Chill at least four (4) hours before serving, garnish with a dab of sour cream.

IMO, this soup is better if it is allowed to chill overnight, so that the flavors have more time to blend. The cabbage will rapidly begin to ferment and the longer it is allowed to ferment, the more effervescent and flavorful it will become.

I know that cold soup isn't everybody's cup of tea, but this is a recipe that my Wife has been making about twice each week for nearly all of the last 30 summers.

I bought the ingredients, waiting to use up the stuff in the fridge before making it. My mother make a similar version, but from scratch.

Sounds good! Lots of cans= lots of sodium. Cook up your own raw beets and make your own beef broth and I'd bet it could be even better. Season to taste at the table.

i always wanted to like beets but just never could. maybe with all that other stuff it would taste good.

My wife loves to tell the story of being invited to a party thrown by a Russian lady, and she really didn't want to go. Until this lady brought out borscht topped by sour cream and a perfectly grilled slice of beef tenderloin. Said it was one of the best things she'd ever eaten.

Funny how things growing up are so different from one family to another is labeled the same, but so far apart.

Borscht in my family was lamb, cabbage, and tomatoes!

I've read a hundred times about it,( with beets ) but never had it.

Go figure.

not to be a douchebag but

i like fresh grated beets, cabbage, carrots cooked in cold soups in Summer and dill. get a good grater box and try

sounds good! cold vegetable soups are very refreshing in the the heat

Have eaten many variations of cold summer vegetable soups having lived in Spain, Russia, kazakhstan, Bosnia

okroshka made with buttermilk and veggies is also very good
