A bread maker is a great addition to any kitchen. I'm just too fat to use mine lately.

I make a lot of bread. I use a 6 QT Kitchenaid with a dough hook to mix. Bread machine is, for me, too limiting. I sent my daughter's cousin in NYC some of my recipes, and she is making my bread for her husband's Japanese restaurant in the City. I feel kinda proud. The bread has been a big hit.

I use a Kitchenaid with a dough hook also. Lately I've been messing around with letting my bread rise up to 4x, I think it gives it a much fuller flavor.
What would Porter Rockwell do?
