used to be in Cincy all the time, when I worked for P&G. There IS no decent chili in Cincinnati. Skyline or any other place. That crap is not chili, more like kinda a loose meat with tomato sauce silliness over spaghetti. Then they add beans to it. Awful stuff. smile

Walmart had some canned chili called Skyline, and it was awful. They couldn't even sell it on the discount asile. Finally donated it to the local food bank.

Couldn't help but feel sorry for the poor people down on thier luck. But then a 400 lb dark skinned sister came in for her monthly share and I thought justice served!


My biggest fear is when I die my wife will sell my guns for what I told her they cost....

lots of Skyline haters here Mike.

While it is an acquired taste and I didn't care for it the first time, I've grown to like it and we always make a stop there and at Graeter's ice cream when visiting Cincy.

We have a recipe around here. I'll try to find it and send it to you via PM so as not to rile certain members! wink

You've been my "go to" recipe guy the last few years. Your comments are crushing (lol). I'd like to make the chili you posted last week but us New Englanders don't have a clue to finding some of those ingredients (i.e. a few of the peppers).

Do you guys mean, "good Skyline Chili" is an oxymoron like "good Irish music" or "jumbo shrimp"?

The recipes typically have you boil hamburger meat and they list things like cinnamon, allspice, and cloves which have no place in anything that should be called chili.

Thanks for the kind words. smile If you like a good chili, look at the old standby here. "Bart's Chili". A very good bowl of red, with most of the good things in it, and none of the bad. If you can't find some of the ingredients, let me know, I'll mail them up to you.

1.5lb Chuck roast
32oz beef stock or broth....Broth is saltier...
4Tbsp Chili Powder
1Tbsp Garlic Powder
1Tbsp Onion Powder
1Tbsp Oregano
1Tsp black pepper
1 packet of Sazon Goya,Con Azafran(You can find this in most supermarkets)
1Tsp Cumin
1 medium onion,diced
1 8 oz.can tomato sauce
1 can Rotel Tomatoes,(Diced tomatoes with green chiles).

Method....
In a heavy soup pot or dutch oven...
Cut the Chuck roast into quarter inch cubes(this is important).
Cook until grey,not brown...Drain the meat and discard the grease and liquid. Set meat aside...
Cook diced onions with corn oil until soft.
Add beef stock.
Add Sazon packet.
Add tomato sauce.
Add Rotel.
Cook until boiling.
Taste for salt....Add salt while simmering until it's right...
At this point the mix should be orange.....
All Tbsp & Tsp should be heaping...
Add meat.
Add all dry ingredients EXCEPT Cumin.....
You might need to add water if it's too thick...
Simmer for an hour,covered,stirring every 10 minutes and taste it for salt...
Add cumin and simmer for 15 minutes...
Turn off the heat and let it set for a little bit....
Serve with sharp cheddar cheese and a dollop of sour cream...

It's held in a special lab in Atlanta at the Centers for Disease control right next to the Ebola. grin

I have Uncle who lives between Cincinnati and Dayton who used to bring it to deer camp. We finally convinced him to stop. I am pretty open minded when it comes to chili but not that open minded.

Nasty stuff, if you ask me. Only way I could take it at all was on a chili dog, and that was pushing it.

Years ago, a friend from Cincy told me I just had to try it. I did.. nuff said.

C&P, but mostly how we do it.

Ingredients

2 pounds lean ground beef
1 quart water, or amount to cover
2 onions, finely chopped
1 (15 ounce) can tomato sauce
2 tablespoons vinegar
2 teaspoons Worcestershire sauce
4 cloves garlic, minced
1/2 (1 ounce) square unsweetened chocolate
1/4 cup chili powder
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground cayenne pepper
5 whole cloves
5 whole allspice berries
1 bay leaf


Place the ground beef in a large pan, cover with about 1 quart of cold water, and bring to a boil, stirring and breaking up the beef with a fork to a fine texture. Slowly boil until the meat is thoroughly cooked, about 30 minutes, then remove from heat and refrigerate in the pan overnight.
The next day, skim the solid fat from the top of the pan, and discard the fat.
Place the beef mixture over medium heat, and stir in the onions, tomato sauce, vinegar, Worcestershire sauce, garlic, chocolate, chili powder, salt, cumin, cinnamon, cayenne pepper, cloves, allspice berries, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for 3 hours. Add water if necessary to prevent the chili from burning.

I am pretty sure it has cinnamon and maybe chocolate? But I'm more sure on the cinnamon. I like skyline on dogs, but prefer Goldstar.

Haters gonna hate. smile

I like warm beer and bacon/peanut butter/miracle whip sandwiches too.
