Brisket is resting.

Green bean casserole, jalapeno cornbread, and tres leches cake for dessert.

For the first time in two years due to health problems my dad was home so we let him pick the menu. My brother, my wife and myself took the reins and left my mom to do the pies. It wasn't your traditional Thanksgiving dinner, but we were all thankful to have him home.

Started off with a romaine and micro green salad tossed with mandarine oranges, strawberries, toasted almond slivers and a spicy vinaigrette. Main course was beef tenderloin with a portobello mushroom gravy, parmesan potatoes, sweet corn casserole, grilled asparagus and garlic bread.

Mom made apple, pecan and pumpkin pies to finish it all off. I smoked a turkey breast on Wednesday for sandwiches later in the day, but it all ended up going home as leftovers. All in all a great day!

Looks good!

Worst part of traveling for turkey day is no leftovers.

Decided to do a turkey on my reverse flow smoker yesterday. I had never smoked a turkey and didn't want to take a chance on having upset guests if it didn't turn out so we cooked one in the oven as well.
The vote was unanimous: Brined and smoked turkey will be the method for all future turkey cooking. Easily the moistest and most flavorful bird we have ever had. I combined the drippings from both birds and made some kick-a$$ turkey & noodles over mashed potatoes for breakfast today.

Brined for two days in Water, worcestershire, canning salt, brown sugar, pepper, garlic, sage, rosemary, thyme, fresh lemon juice. Smoked four hours over cherry at 300°-325°.

Ummmmmm...not being mean but no way that is an internal temp of 200. Too pretty to be above 120 at best. Maybe your cook temp was 200?

Now I want one!!!

Ah, I gotcha. Misread your post. Cooked at 200F--I think for four hours. Internal temp ended up 115-120.

Just had a sandwich with the left over slices. I don't eat much beef but roast prime rib is heaven.

I did the whole spread for the first time in a few years.

Homemade Parker house rolls
Turkey with sausage apple cranberry stuffing
Yams with apple and brow sugar.
Mushroom green bean casserole (from scratch)
Corn gratin
Mashed potatoes
Gravy
Orange cranberry sauce

2 pumpkin pies
Apple pie
Huckleberry pie.
whipped cream

And assorted appetizers.

Had a Japanese exchange student as a guest. First Thanksgiving. Skinny little college sophomore. She was amazed. She had two plates of dinner and a slice of each type of pie. Asked her what she thought. Mumbled through a mouthful of pie, 'I love it'. Pretty cool.
