We are smoking turkey, brisket and salmon. Sides of mac and cheese, potato salad and green beans with ham and onions. Dessert will be a choice of strawberry/rhubarb of apple pie.

That wild rice stuffing sounds killer! I do a sausage, apple, and sage stuffing with pistachios that turns out pretty damn good but I gotta try that wild rice one! Recipe?

Daughter graduated college this year so it's the first time we've had all the kids home for Thanksgiving in four years.
I'm thinking the fair will be pretty standard:
Bird Dressing Mashed potatoes Gravy Cranberries Green been casserole Pumpkin pie Apple pie
Might have a few more appetizers, but there's only so much food five people can eat.

Recipe? Pretty simple and kind of along the same flavor profile as yours. Soak 1/2 a cup of Golden Raisins overnight in Cognac or Brandy. Saute a package of sweet Italian sausage cut into about thumbish sized chunks and reserve Saute a cup of mirepoix in the fat left from the sausage with a little butter. Cook the wild rice. I tend to use a mix, this year it's Lundberg Wild Rice and if it doesn't look right I'll add a little more. Cook according to the directions although I'll use some low-sodium chicken broth instead of water. Toast the pine nuts Drain the raisins (drink the Cognac should you wish, and I do ) When the rice is done combine the reserved sausage, the raisins and the pine nuts in a casserole dish and just heat it all until it's hot.

i was kidding , my divorce was 30 years ago. strange sense of humor :-) P. i dunno what the first TG was like, since i wasn't there. but, if it was a great celebration over a victory battle w/the Tribes, or if it was a gathering of the tribes & clans in unison i have no clue. but either way, it probably was a great celebration. and we can tell the Story in anyway in hell that we wish to do so. meanwhile we're doing smoked ham and the accouterments this go-around. the dry turkey is in the past.

Yea....I've got my fat ass Cur dog on a starvation diet but I'll probably break down and give her a piece of Kielbasa.
I feed all the Deer, Squirrel, Quail, and Rabbits in the neighborhood so I'll put out an extra heaping portion for them too.

Not much, keeping it simple.
Roast turkey, beef flank braciole, roasted smashed pototoes, green bean casserole and cauliflower au gratin. Dessert is apple/pear crumble with lots of apple brandy, and harvest cake.

I'm workin' noon to midnight in the ER today. When I get off tonight I'll go to the gym for some cardio, then I'll go home for some salad made with green butter lettuce, and some kielbasa, and some biga$$ shrimp...!

For the first time in two years due to health problems my dad was home so we let him pick the menu. My brother, my wife and myself took the reins and left my mom to do the pies. It wasn't your traditional Thanksgiving dinner, but we were all thankful to have him home.
Started off with a romaine and micro green salad tossed with mandarine oranges, strawberries, toasted almond slivers and a spicy vinaigrette. Main course was beef tenderloin with a portobello mushroom gravy, parmesan potatoes, sweet corn casserole, grilled asparagus and garlic bread.
Mom made apple, pecan and pumpkin pies to finish it all off. I smoked a turkey breast on Wednesday for sandwiches later in the day, but it all ended up going home as leftovers. All in all a great day!

Decided to do a turkey on my reverse flow smoker yesterday. I had never smoked a turkey and didn't want to take a chance on having upset guests if it didn't turn out so we cooked one in the oven as well. The vote was unanimous: Brined and smoked turkey will be the method for all future turkey cooking. Easily the moistest and most flavorful bird we have ever had. I combined the drippings from both birds and made some kick-a$$ turkey & noodles over mashed potatoes for breakfast today.
Brined for two days in Water, worcestershire, canning salt, brown sugar, pepper, garlic, sage, rosemary, thyme, fresh lemon juice. Smoked four hours over cherry at 300°-325°.

Ah, I gotcha. Misread your post. Cooked at 200F--I think for four hours. Internal temp ended up 115-120.
Just had a sandwich with the left over slices. I don't eat much beef but roast prime rib is heaven.

I did the whole spread for the first time in a few years.
Homemade Parker house rolls Turkey with sausage apple cranberry stuffing Yams with apple and brow sugar. Mushroom green bean casserole (from scratch) Corn gratin Mashed potatoes Gravy Orange cranberry sauce
2 pumpkin pies Apple pie Huckleberry pie. whipped cream
And assorted appetizers.
Had a Japanese exchange student as a guest. First Thanksgiving. Skinny little college sophomore. She was amazed. She had two plates of dinner and a slice of each type of pie. Asked her what she thought. Mumbled through a mouthful of pie, 'I love it'. Pretty cool.
