tomato sauce ruined it for me. been better in gravy with noodles.

a friend brings me Black Bear meat every year. His family has a big game processing facility up in Tennessee. Last year, they did 1400 or so deer, a bunch of hogs and bears as well.
I find the meat makes excellent sausage, when mixed with pork and seasonings. The burgers are not so good, at least the way I have been doing them.

We usually do sausage and burger. Last bear became 50 pounds of pepper sticks too.

My co-workers usually turn them into brats, and they are tasty! Almost makes me want to shoot one someday. Almost.

I am too picky on fur though.

This was actually an August bear that my son killed on a caribou hunt. I posted the story at the time. The 6' boar came into camp 1 time too many. Pretty nice hide without spring type rubs.
