I am truly blessed with good neighbors and friends. A couple of the lads went fishing out of Mouth of Suwanee yesterday. Airboat fishing. They limited out on Redfish, and gave me all the filets.
I repaid them today by cooking up some blackened Redfish. I used a big cast iron skillet over a wood fire.
I dip the fish in mix of butter and olive oil, then it goes into the seasoning mix. After it's coated well, it goes right into the pan. No extra oil. It cooks in moments, and then I flip it over to cook the other side. Same seasoning mix I used for years in my restaurants. Secret recipe. lol
Served the fish with rice, and Cuban style black beans. There was a salad for those that wanted it, and of course, a selection of ice cold beer and ale.

I used the 15 inch Lodge. Somewhere in the shed, I have a 20 inch also.

Sam, That does look good, my friend. As I said in a text to you, I wish I had a dollar for every redfish I've cleaned, cooked, and possibly eaten.. and I would happily do it again right now if one were in front of me. smile

It's possible they may have recovered since their decimation a few decades ago. The restocking programs in LA serve as a poster child for the rest of the southern states.

I believe TX and AL programs benefited greatly from data sharing from the LA project (or maybe it was the other way around??). grin

Sam you made the other neighbors go crazy with the smoke from Blackened Red Fish. one of the best smells there is. Looks great bet it tasted great

I'm a big fan of blackened fish, I do catfish fillets around here but when available will pick up redfish, grouper or other just for a change of pace. Here is my 16" Cabela's branded pan at work Christmas Eve with some shrimp?
