The farmer took the CRP out around our place and this has caused an influx of cottontails coming into the yard this winter, living under the shed etc.

I've been taking them out as I see them because I have new trees planted and don't want them destroyed.

I'm thinking about smoking some on the Traeger. Ever tried smoked bunny?

Is it good or does it get dry?

Cotton tails are in short supply around here. I tried to buy some domestic meat rabbits here and everyone was horrified that I wanted to kill and eat them.I want to smoke some. I think they would turn out great because it is not a heavy tasteing meat.

That's what I thought too. But not sure since I haven't done it.

I'm thinking some sort of homemade rub with a hint of bbq in it.

the only real difference between a good tracker and a bad tracker, is observation. all the same data is present for both. The rest, is understanding what you're seeing.

I've not smoked them so can't help but the first thing that came to my mind, BACON!

Mmmmm, smoked bunny with bacon!

We'll need a report from your test kitchen.

WOW, I used to raise New Zealands and I couldn't sell a 12 week old, cleaned and in a ziploc for $12 - so we ate them all and I stopped trying to sell them. we didn't buy chicken for years.

Yea, many years ago ( about 60)I use to raise them. If I recal the going price was $2 and that was for a 10 week old one.
In the early 70's I use to keep three does and a buck. I could raise as much meat as a person could get from one beef in a year. Wife and kids got tired of eating bunny though.

My son was about 7 or 8 when I took him for a little walk and he smoked a varying hare (snowshoe) at pretty short range. He giggled about the ear ventilations for just a touch too long... made me think he was enjoying killing a bit much!

wink

I'd consider brining first. Rabbit can be a bit dry.
