I've been fishing walleye pretty hard this ice fishing season and have a feed built up in the freezer. Hoping to have some friends over this weekend and wanted to do some beer battered walleye up. Anyone have a good recipe to share?

Sam, I'm not sure I could do it but, an Ontario friend coats, or breads with a Kellogg corn flake crumb mix, and fries in a pan with peanut oil.

He also uses a beer batter, and deep fries in canola oil, both quite good.
Now I'm hungry for Ontario pickerel!

Thanks Wabigoon. I've heard of guys doing that with crushed potato chips too. Particularly salt & vinegar.

I usually use the following:

2 cups Bisquick
1 cup flour
1/2 T Black Pepper
1/2 T Cayenne Pepper
1/2 T Onion Powder
1/2 T Italian Seasoning
1 T Garlic Powder
1 T Paprika
1 T fine salt

Mix ingredients in an air tight container. When ready to use, put some in a Ziploc bag. Add water moistened fillets and shake to coat. Fry in oil at 340-350 F on each side.

Mix usually makes enough for 2-3 feeds for my immediate family.

Sam, I think you have it figured out well.

A couple thoughts, the corn flakes need to be finely crushed, I have run them through a blender, but I have seen the ready to use at Dryden, Ontario Walmart.

If it would be an issue, say transporting on a lake, the beer batter uses the carbonation, Seven-Up, or club soda works as well. There may be some difference in taste, but my buds are not that sophisticated.

If, you have an extra serving, I'd love to enjoy some tasty fish, call em', walleye, or pickerel.

They sell crushed cornflake crumbs in a box already I use them for my crab cakes

1 part flour
1 part corn meal

put in a paper bag of plastic container. Put in fish. Shake until thoroughly coated.

Save the beer for the huspuppy batter.

as so often is the case, keeping it simple works just fine. I have making beer batter at home, and in my various restaurants for many years. I have never found a better recipe.

12 ounces beer
cup flour
teaspoon salt
half teaspoon Tabasco (I use the one I make)

Stir the beer,flour and salt together until frothy. Add the hot sauce, and stir, then let it stand for an hour or so. Stir a few times before using.

Hey Wab.

I actually used the recipe I listed above, but made it a batter by adding some beer to it. Coated fish and deep fried. My wife loved it (and had seconds!) but my youngest was not a fan and struggled with it. I guess that's a partial win at least?

I like to mix it up and use tempura batter

I do some veggies and fish in the batter

Make sure batter is very cold when you use it

use seasonings in a dipping sauce not the batter.

A simple batter is Krusteaz pancake mix, salt, pepper, paprika and enough beer to get the consistency the way you like it.
