that was a 1 bone ribeye approx. 3 1/2" to 4" thick

It was Choice...I really prefer it done a tad less but Deb was still bitching I didn't cook it enough...told here that's as cooked as I'll ever make a steak...I pulled it off at 127 degrees and let it rest for 20 minutes

Around here, it's hard to get a rib-eye cut thick enough to fix it right. It's too thin, which results in it either being burned on the outside and completely raw on the inside, or it's over-cooked.

Super beautiful cook on that steak Dan, but you lost me at mesquite, or the devils fire wood as I call it. Nothing against you or your cook and I'm really not a picky eater at all, (hell just look at me) but that mesquite wood flavor is not my thing. I know I would get my a$$ hung from a street light in Texas for saying it, but to me it tastes like I ate it out of a dirty ash tray. grin
