What does it take to use a Remington threaded barrel on a Weatherby Mark V action? Would the threads have to be cut off and barrel re-threaded or can the threads be modified to fit?

That might just work with a little lathe work. The 700 barrel shank measures 1.055" by 16 tpi and is .885" long. The Mark V shank measures 1.060" by 16 tpi and is .700" long.
The counterbore in the 700 is .140" deep and .700" in diameter. The counterbore on the Mark V is .130" deep and .720" in diameter.
Seems like you'd just have to take .185" off the 700 shank and recut the counterbore to Mark V size.

I'd be curious about this as well. How much shop time do you think, nsaqam? An hour? Might well be worth it if a quality custom barrel were found at a really good price that is threaded for a Rem 700.

I'd say about an hour to face off the breech and cut the counterbore. After that is done it is a simple rechamber job just like any other.
