I'd like to get y'all's opinions on these two steels...if you were gonna have a custom hunting knife made, and you were given a choice between these two steels, which one would you choose...and why?

S90V has worked for me. Have not had a blade in S35VN.

I work with both. If you're looking for superior edge holding ability in stainless, you simply can't beat S90V.

They both make super knives.The average person will be hard pressed to tell the difference

If I remember right S90V is about the same, or exactly the same, as 440V. If that's true, I'd say you're exactly right. The 440V knives I've had owned have had extremely long lasting edges and were very challenging to sharpen. Trade offs.

440V and S90V are exactly the same. You really need ceramic to sharpen, but it's worth it.

440V and S60V are the same.S90V is a little different.

You're right and I stand corrected. S90 was 420V and agreat steel too. In any case, I'd go with S90V if offered.

S60V = 440V

S90V = Great steel that holds edge even longer than S60/440V but is even harder to sharpen..............................DJ

Go with which ever comes available first.
Doubt you could tell much difference in side by side field test.
