AEB-L is some great steel from what I've seen so far. I'm really impressed with it. Clean steel and as you said it takes a wicked edge. Seems to hold it really well too. I've heard it compared very favorably to a stainless 52100 which sure ain't a bad thing. Dennis will definitely put it thru it's paces.

Best, GWB geedubya ,big Ricky Bob told me straight up,he says , "You know Vince you can keep a few of these knives for yourself ,you know" I thought no one liked the maple anyhow,I never could sell one too easy. I like blondes ,what can I say, but if you want your Santoku in maple rather than blackwood,just let me know.

It seems to me maple takes the best stabilization. My favorite wood.
