I am old school, when it comes to cooking grits. Long and slow. Takes about 20 to 25 minutes to get them right.
Recently I bought a new stove, a Maytag 5 burner gas. The small burner is just 5000 BTU, and it throttles down to a real simmer.
Best pot I have ever found for grits, is this old Le Cruset sauce reduction pan. Cast iron. It makes perfect grits every single time. Period.

20 min on low. Check with about 5 min left,sometimes I need to add a tad more heat.

dry, but not dried out. Cooking proper grits is an art form. smile

I almost always toss in a bunch of Cheddar cheese as well.

Long, slow, and covered in an old 2qt Revereware sauce pan.
I add some browned and diced bacon (drippings and all).
If I'm in the mood I'll add some grated onion too.

I grew up on grits cooked slow over low heat and served plain. My favorite way to have grits is the way my sister prepares them with stewed tomatoes and bacon or ham including the drippings. Absolutely delicious.

I am going to make a pot of cheese grits in the morning. Local made smoked pork sausage on the side. Couple of fried eggs. Coffee, fresh OJ.

Gotta cook grits at least a half hour to make them creamy. I like to add some half and half to them and stir in a big pat of butter. Top with fresh cracked black pepper.

One does not need to be a southerner to enjoy grits. I like mine with some butter, crispy bacon broken into small pieces and 2 eggs over easy, all mixed in with the grits then seasoned with some salt and freshly cracked black pepper.

I like hot dogs without anything whatsoever on them. They taste good. The coney sauce is for variety.

They are kinda bland plain but so's salad without some kind of dressing. wink

I just had some cooked with bacon and cheese topped off with a couple of over easy's and about a quart of Frank's Red Hot.

Heaven!!!!!! grin

Egg yolks and hot sauce are to grits what Ranch dressing is to salad. smile

Well said. Refried beans and grits are the easiest foods in the world to digest because they are both crap to begin with. Yuk. With a world so full of good food why would anybody waist even one minute on grits??? But hey I suppose if you dont have access to good food you have to make due and eat grits, right?
