Given it's an iphone camera, but in general even with my G12 I never seem to be able to capture the vibrant colors of a sunset. The sunset last night was really incredible, but it seems I have trouble picking up the vibrancy of the colors.

Say one was setting up a DSLR for sunsets, what would be a good lens, filter and settings to run?

A lot of info on the web for this.
If you leave your camera on Auto everything it probably will be overexposed and wrong white balance.
For staters;
Tripod
ISO 100
Take off auto white balance, try daylight or shade
You will need to adjust the exposure for less than the metered amount. Either use exposure comp (-1 or -2) or use manual.
Lens and fstop will be dictated by subject. Try f8 if you are not needing depth of feild control in your shot.
In the old days people used a graduated filter, HDR has replaced this in many cases.

Are you shooting/processing raw or jpeg? If jpeg, set it in camera to fine, not normal.
Check the histogram to be sure you are not overexposing.
Use the lowest standard (not extended) ISO to get the widest dynamic range.
In Post, set your black point in levels. Maybe add some saturation and adjust the highlights/shadows.
Is this image processed or jpeg straight out of the camera?

As mentioned, that was an iphone picture, not processed.
