Next time you make some chili, shred a small head of cabbage and add it to the chili for 30-60 minutes on simmer or with the crockpot on low.
It's fugging good. Adds a different texture and is just downright good.
IMO it's best with the ground meat varieties as opposed to cubed.

I make a similar chili to Barts but with the chuck swapped out for ground elk.
I've been adding green chili and salsa verde and I really like the added flavor. I think I'll try Flave's idea above and see how it turns out.

I have mixed feeling on the stuff that is sold as "Chili" over here..I like the hot/spicy flavour, but don't care for the kidney beans that seem to be a mandatory ingredient..

But then again I was taught how to make it from one of the smartest and nicest Welsh gentleman ever. I'll likely try the cabbage in the chili....I seem to be using it more and more in other dishes instead of lettuce; taco salad, crappie fish tacos, etc.
Recently, I started adding finely shredded carrots to the chili pot. Fun to experiment as I'm not a purist.

Cabbage steaks - cut 1 1/4" "steaks" starting at the top and working toward the core. Preheat oven to 375, rub each side of steak with EVOO, sprinkle with coarse salt, coarse black pepper, and rub a cut garlic clove all over, or spread some minced garlic on one side. Bake on cookie sheet for 30-45 minutes, or until outer leaves are dark brown and the center is tender. They're fantastic. And yes, deadly.

I am going to try the cabbage. Ground beef and cabbage are a naturally good combination.
Also, all my sisters are vegetarians so who knows...maybe I can come up with a vege chili using cabbage.

Hey, now. there aren't beans in it! My bride grew up in Cincy and when there to visit her Mom, Skyline is as obligatory a visit as Graeter's ice cream! it took me a while to enjoy chili that had baking spices in it, but I like it now. In my defense, I have never fired a 270 though.
