Trav, I'll give it a shot. I love cabbage - adds a great texture and depth to many dishes. Have you tried roasting cabbage "steaks" yet?

I'll likely try the cabbage in the chili....I seem to be using it more and more in other dishes instead of lettuce; taco salad, crappie fish tacos, etc.

Recently, I started adding finely shredded carrots to the chili pot. Fun to experiment as I'm not a purist.

Most of these morons don't understand chili is supposed to be a gaggle of schit that needs cooking.

Especially Texans. They think it's an "art."

No.

But that sounds good. And deadly.

Cabbage steaks - cut 1 1/4" "steaks" starting at the top and working toward the core. Preheat oven to 375, rub each side of steak with EVOO, sprinkle with coarse salt, coarse black pepper, and rub a cut garlic clove all over, or spread some minced garlic on one side. Bake on cookie sheet for 30-45 minutes, or until outer leaves are dark brown and the center is tender. They're fantastic. And yes, deadly.
