My father has raised rabbits for meat for a long long time. These are our two favorites Crispy oven fried rabbit 1 3-3.5lb fryer rabbit 1cup breadcrumbs 1/2cup grated Parmesan cheese 2tbsp chopped parsley 1/2tsp pepper 1/2tsp garlic powder 1/2cup melted butter. Cut rabbit into 5 pcs.( two hind 1/4s, 2 front 1/4s and loin). Roll in melted butter and coat in mix of all other ingredients. Place on rack in shallow baking sheet and spread extra crumb mix on top. Drizzle left over butter on rabbit pcs. Bake at 350 for an hr.

Rabbit with egg noodles 1 rabbit of any size 1 cup flour Tbsp salt Tbsp pepper Tsp garlic powder Tsp onion powder 2 cans cream of mushroom 1/2 sour cream 2cups mushrooms Cut up rabbit as in last recipe. Coat in a mix of all dry ingredients. In a md Dutch oven heat a tbsp of butter and tbsp of oil. Brown dredged rabbit pcs in batches. Place all browned pcs back into Dutch oven, mix soup and sour cream and pour over rabbit. Cover and bake for 45min.@ 350. Put mushrooms over rabbit and bake for 15 minutes more. Serve over egg noodles, or rice.

Best rabbit I ever ate was in Paris. GF and I decided to walk from our flat in the 7th district (arrondissement sept/"Le Marais") to Sacre' Couer (Montmartre).
Little did we know, that's a fine hike across the equivalent of half of Paris proper. We stopped at a cafe in the 8th or 9th for lunch. I had rabbit in a red wine reduction with a root vegetable mash that if I ever figure out how to make, I'll be making it a lot. Mighty tasty.

Hard to beat a good ole soaking in buttermilk over night, salt, pepper, flour and fried. Biscuits, rice and mater gravy on the side.

Just a tip - on the front quarters, cut them off just as you would the shoulders of a deer. Don't leave the ribcage on - it gets in the way while eating. After you take the shoulders off, then it's easy to take each loin off and have nice boneless strips. When frying, I also remove the femur and shank on the hind quarter for a nice boneless chunk. You'll love them, I'm sure! And I'd start with that oven-fried recipe above.

Looks real good New_2 . . . good job. Wabbit pot pie is a good change up from the fried/roasted recipes. Just be sure to use a home made lard crust for the shell . YUM . . .
