Ed, are you giving protein since your "retirement"?

Goal #1 for retirement is to dump my blood pressure meds. Figure my stress level is down 1000% so with a better diet and more exercise I can make it happen. Trying to eat veggie four nights a week, cut out sugar, more chicken, etc.

Ed, sounds like a plan. Good Luck! Been working on that some myself. I've got a ways to go.

I'm liking the looks of those 'shrooms!

Case in point, these don't look like they'd suck.

Or these.

Plenty of ways to substitute for the Amaranth and tofu, if needed.

Nope. A burger will still be proper, just not as many. In fact tonight it will be burgers. Last night was broccoli and a salad with a half can of albacore tossed in. Oil, vinegar, salt, pepper and a bit of crumbled baked Parmesan.

Tempeh. That is what you need. Not the frozen chit in the grocery store, but real, well made, traditional Tempeh.
You can fry it, use it for Pizza toppings, make a delicious burger out of it, put it in stews, bake it. Anything you can do with meat, you can do with Tempeh.
I have a bit of knowledge about the product, with my Son making and selling it for the past 10 years.
He has helped two folks set up a production/sales facility in Austin Texas, recently. Is that near you?
Just one recipe, out of the hundreds that I have made up for Tempeh

Southwestern
Tempeh and Black Bean Cakes

One 15 ounce Can of Black Beans, rinsed and drained
One Artie’s Tempeh Burger, diced
2 Tablespoons Mayonnaise
¼ cup fresh chopped Cilantro
2 Tablespoons fresh, unseasoned bread crumbs
1 Tsp Habanera hot sauce
½ Teaspoon ground Cumin
¼ Teaspoon Kosher Salt
½ Teaspoon Fresh ground Black Pepper

Using a mortar and pestle, grind the diced Tempeh and Black Beans to a thick, chunky paste.
Add in the Mayonnaise, hot sauce, chopped Cilantro, bread crumbs, salt and pepper, and mix well.

Using lightly floured hands, form the Tempeh and bean mixture into 4 equal sized patties.

Heat a wide skillet or griddle on medium heat. Brush well with olive oil. Add the cakes, and cook until browned and crisp on the bottom. Turn the cakes over, and cook for another three minutes longer.

Serve over shredded lettuce with salsa, or use as filling for a burrito or wrap.

That sounds darn good, Sam. I'll bet some of my chipotle aioli would work well on them, too.

it would indeed. My lad recently got his product in the Breakers various restaurants in Palm Beach. They called him, and asked him to deliver.

Seventy five miles away. Can it be bought on-line?
