I just checked the freezer, got two big old fox squirrels in there ( not fryers) .
This is not enough for limb chicken chowder, and Im tired of squirrel pot pie.



How should I cook these two up?

Boil them, peel the meat, sear em in a cast iron skillet, with chopped onions, taco seasonings, cilantro, etc. Then, roll em up in big tortilla shells, along with your favorite tex/mex sauce and bake em in the oven. Add cheese to the top.....waa laa squirrel enchiladas! wink grin.....a little cummin added to the meat helps too...whistle

Got to work 2 more "snow days". Get out of work and out of this friggin cast in the same week.
Woe be unto the skwerls. Got some catching up to do. Was able to "crip around" Fri eve and catch a good mess of bass though. Yum, bass on the grill.

Been catching them on the bed big time. Cleaned 50 BIG bulls a couple of days ago. The slab crappie are doing well also.

Bring it on. A Dr. friend of mine has a big lake and he wants me to catch a minimum of 1000 bass and all the "brim" I can out this summer. Wants me to keep any bass under 2-2 1/2 lbs.

Hank Shaw's recipes (you should check out his Fish & Chips, among many others) are simply amazing. Most of them are reasonably simple, and pretty quick.

Your tongue will thank you, but your waistline may hate you.
