One time almost 30 years ago I watched a guy (he was on depredation permits for a farmer in the Town of Amherst NY) unzip a doe from stem to stern, pull and bag a pair of fetus and continue to gut her with the utmost perfection I've ever seen. And he never took his jacket off or got blood on it. He pointed to a tree in a far corner and said he figured he'd shot close to 500 deer from that tree.

He had that same Cutco knife and used it like a surgeon.
