I'm considering buying a 20g U/O Beretta, whilst searching I found a few, but just want to know what's the difference between a Silver Pigeon 686 and a Silver Pigeon S687?

Mechanically, nothing.
Mechanically there is no difference. 687s have a game scene engraving, while 686s have a floral pattern. In the base models that is the only difference. They do make higher grades of 687s like the 687EL and 687EELL. These have highly engraved side plates and fancier wood. They do make a 686 Onyx and 686 Essential (or used to make) These are both lesser grades of the 686 with less engraving.
