There's a bird thread in the cooking section.

I roast mine. Cover the breast in cheese cloth and baste with wine and butter. Remove the cloth for the last bit and brown it up.

Works great!

The one and only time I tried frying, I fried it to a crackly crisp. Since then, I just bake a ham.

I have to work Thanksgiving Day but am supposed to pop the bird in the smoker Sunday morning when I get off work. A mixture of JD barrel chips and sassafras and it should be good.

New oil-less fryers are great! Basically an outdoor oven. You can read a book and smell it getting closer and closer to being ready, huddled up next to it if cold enough outside.

I tried the oil-less fryer last year, went back to frying in oil. Just didn't taste near the same to us. That was a waste of $100 for me.

Doing two small ones this year....one roasted in oven and one on the smoker. This one done in the smoker has Smoking Gun rub. Good stuff.

Elwood,
That looks good. When I smoke mine on my BGE; I stuff the inside with apples and celery to keep it moist. Cover the outside with mixture of butter, olive oil, salt, black and white pepper. When you slice it, it oozes it is so moist. Use the drippin's in my giblet gravy. When I am done eating it, take the carcass and leftover meat and make smoked turkey and andouile sausage gumbo.
Yummy.
