OK...

Meat, about 5 lbs today, chuck roast I got for 3.77 a lb so whatever's on sale.

1 sweet onion
4 garlic cloves
2 serranos, but any hot pepper will do, just pepper to taste
1 green chili
2 tomatoes

Chop dice all

1 lime squeezed
Olive oil
probably 1/3 cup worcestershire, I just pour in what looks good
oregano
salt pepper
and a half cup of Santa Cruz chili powder

Mix liquid, garlic and spices in a bowl, enough olive oil to get a covering on all the pieces of meat.

Put a half inch of water in a roasting pan, I put some beef bullion and a little more chili powder in the water and heat it in the oven while getting the meat ready.

Put meat in pan, put diced veggies on top, cook for about 3 hrs at 350 uncovered or until it shreds easily, usually the juice has cooked down to just wet meat, vegetables absorbed in the meat. I check the juice when turning and don't want it to get completely dry.

You can throw everything in a crock pot also, just sear the meat first.

serves 6 to 8 people, six of us ate all that in fried tacos and burros with red sauce... but we were stuffed as ticks.

Scheduled for a C section tuesday morning. Unless she goes into labor before.

That's why we did Mia's birthday today, mommy will be in the hospital on her birthday.

So my birthday is the 18th, grandson's will be on the 21st (if not earlier), the other grandmother's Bday is the 22nd and Mia's is the 23rd... My daughter said she can't afford april anymore.

Headed out early am to meet Enrique and Steve to do some fishing on black river. May be early in the year but we'll check it out and make plans for their archery elk hunt coming this fall.

Traditionally machaca is dried spicy shredded meat, like crumbly jerky. Can be eaten as that or rehydrated, ingredients added, put in a tortilla, breakfast, lunch or dinner.

Now days machaca typically means cooked spicy shredded meat, can be breakfast with eggs, tacos, burritos, or just by itself... the do all dish.

Think I'll dry some when I make jerky for next hunting season, get back to tradition as a trail food.

My Bday present was I left at 3:30am, met Enrique and Steve in Globe, went to Black river, 3 1/2 hour drive total, hiked down into the canyon, threw some bait, caught a few fish, it was too early yet...or too late in the season, water was low from the drought.

Had a great time, left at noon, talked about their elk hunt coming up.

Saw a ton of antelope and deer going up, Enrique took some pictures on his phone, hopefully he'll share.

Needed the wild hair trip.
