Was Marlin the only company that made the stainless version or did Remington make stainless version also.

Not sure I understand your question. Are you wanting to know if Remington still made the stainless version after they acquired Marlin or if all stainless guns are pre-buyout?

All I can tell you is my stainless 7mm-08 was bought new as a closeout about 2yrs ago and it does not have the JM stamp on the barrel like my lever guns.

It is very accurate. 1/2 inch groups with my 140 Sierra ProHunter handloads. It's quickly becoming one of my favorites.

The Marlin X guns morphed into the Remington 783s and AFAIK Remington hasn't cataloged the 783s in stainless.

I have yet to see a poor shooting Marlin X gun. I've got a dozen of them, mostly rebarreled with recycled Savage 110 series barrels, and have shot at least a dozen more. I think that Remington should have just made the X guns in the same configuration that Marlin did, as the cosmetic changes to the 783s are a negative for me.
