Moose meat ... colored ? Well after shooting 30 some odd moose over the years I�ve have never ran into this! Last years moose, packed rite and just taken from the freezer. Took out a small roast Sunday eve, kinda the size of a small nerf football, left it to thaw a hour or so, then instead of roasting it �whole� I did a bunch of �thin slices� to make a �sort of beef- with noodles in a cream sauce� as I cut each slice fell �.like slices of a bread loaf ��..�I seen a color, a sheen of sorts ,that looks like the gold dust/rainbow/green sheen of a fresh caught salmon/trout > all the way thru the whole thing ,but mostly on one side about the size of your/a thumb print, I could not rub it off it did not smell ��everything�s fine�.. so I season the meat up some by pouring on some soy sauce a bit of apple cider vinegar , a quick stir fry with a small sweet onion /cooked thru then added that to my sauce and hot egg noodles and into the oven toped with some cheese to add flavor and a crust �.it was good to go and we ate near � the pan �..this morning I toss us some lunches in Tupperware to have at lunch �hummm -something not rite �.sure enough I get to work > and more awake I mite add< �and pop open the container and I have what looks like purple meats in my dish??????? wtf???????????? I have no colored onions either /that the 1st thing I thought of . I have pics >at home and will try and post tonight....�.called wife and told her to �toss lunch� !! she looked at here sure enough ..purple �me �.I�m going to keep mine for pictures when I get home I will post them both �. Weird��..

I've had deer venison that has had that look as well.

Tasted fine, and nobody got sick or died after eating it.

Perhaps your Schidt or Better binocs need cleaning so you can look for the purple USDA approved stamp on the right one next time. crazy

While I always like things to look pretty before eating them, the most important test prior to munching is the sniff test. If it don't pass that, no munching for me! wink

I've seen this in every caribou I've ever butchered. I usually notice it in the tougher cuts, ie lower muscle groups on hindquarters and most any part of a shoulder. Tastes fine and I've never culled any because of it.

If it bothers you I guess you could just use more gravy:).

Thanks for that explanation Mart, I've seen the rainbows a few times on game meat I was cutting up and wondered about it. One whitetail in particular was really colorful, and it didn't have that real fresh smell that is reassuring, but it ate fine. ATV, like to see the pictures, did the meat actually turn purple, or just have a purple shine on it?

Okay, I'm thinking I can see that yellowish shine on the meat in the bottom pic, it does that rainbow/oil slick color as you move around. But the top pic, is that purple lump a chunk of said meat after cooking? Never seen that.

Thanks for the link Mart. That moose in the pics has something else going on though. Freezer leaking gas? Was the moose wrapped in paper or frozen in plastic bags?

It's pretty obvious that that moose was both very young and would have never grown antlers- had it lived of course! ( laugh ) Seriously though, that is some of the palest moose meat I've ever seen in raw form.

both "chrisc" and "redneck" can vouch me ! As they have had both the meat and a pic of the near 40" moose ! so take that back u guys !!!! ........the head moose guy at F & G is on this > seems a whole moose with this "color" was brought in ....awaiting the biologist ....

yumm t bones! ..as far as skinnys go.... they lit out for AZ.......snow birds again...any beer near me /u will be worked like a rented mule to earn... if'n I aint drank'em all !! lol

Me too. My second thought on the iridescence is the tell-tale trace of ammonia that gets in the meat when the bulls be slurpin' cow whiz during the rut. Size 40 is a sure sign of adolescence so that explains how he nearly OD-ed on the 'succulent' nectar. Eat up�. grin

Good morning to you sir, hopefully other than being in possession of the off colored moose meat this finds you folks doing well.

I've been following this thread with interest as I grew up eating Saskatchewan moose and then have eaten some BC moose since then and this is new to me.

If you're so inclined I for one would love to see what the "folks in the know" tell you if and when they do.

Thanks again for aiding in my continuing education sir and all the best to you and yours this Christmas season.

My goodness Randy I am now quite embarrassed and didn't mean to slight such august opinions as you or my other two cyber friends from Alaska offered.

I must confess though that my reading comprehension must be suffering somewhat - or better said my ability to read between the lines or understand local jargon. blush

Anyway Randy, I'm certain I'd not have thought of Klick's solution - notice how I worked solution into an ammonia based answer...... wink

I've seen that rainbow on fresh fish fillets too where the meat is cut across the grain.

You can expect to hear them look to "control" the 'overpopulated' herd by managing for more predators (wolves).

Thanks ATV. If that's true, it makes sense with the whitetail buck I shot that had all that coloration, he looked like he had been running/breeding himself to death, zero fat. Gosh, I hope I go out of this world with a big 'ole rainbow shine on me! smile
