Pigs have bacon and pork chops and back straps and tenderloins on em’ but that stuff pales in comparison to head cheese and pig snouts and pig ears.

Get a bit of hog liver, throw it in a pot and cook until the meat comes off.

Well on your way to scrapple and puddin.
Some buckwheat cakes, maple syrup...
That's what breakfast should be.

True story. Back when I was dating my first wife, my family butchered a hog for sausage. She came by when we were in full sausage-making mode. She wandered into the dining room and saw a large bowl covered with a dish towel. She lifted the towel to see the pig head staring up at her! LOL!!!!

never saw one in any of the Walmarts I've been in.

I wonder if they could be cooked in a pit like traditional beef "cabeza".

Probably make wonderful tacos as antlers says.
