shrike,

Just a couple of minutes with a standard search engine got me www.alliedkenco.com
which is a chef supply company that lists this recipe. You will have to contact them for the recipe as they do not have it written out on their website.

Regards.
3 cups Ground pork butt
1 cup Ground beef
3/4 tsp Black Pepper
1 tsp Salt
 tsp Sage
1 tsp Oregano
2 tblsp Paprika
2 tsp MSG
2 Sprinkles Hot pepper seeds
6 cups Chopped Leeks

Saute chopped leek in water and oil until transparent, then drain in water and let cool. Mix spices, meat and leek. Put in hog casings or make into patties. If in casings, hang for 48 hours and then freeze. If patties, just freeze. It gets hotter with time in the freezer.

Carbonman,
Thanks a zillion for the recipe for Macedonian Leek Sausage. Finally I got it now. I had just about given up on it. Even cook schools could not find it.
There is one pricey cookbook that has it listed. I was not about to buy an expensive book for just one recipe.
Gratefully,
Shrike
