Impressive how much food he was moving across that grill.
More so his focus on doing things right and quality.
Every sandwich was built with fresh, hot food.
Liked how he carefully stacked the burgers and covered them in onions,
no cold, dried out burgers from him!
They have it down for sure. Looked great to me
Eating at that joint would almost be worth the trip to Chicago! grin

Grill? Griddle.
I’d say griddle, but crazy efficient non the less.
Griddle is probably more correct. In my neck of the woods, we call them "fry cooks"

Recently I stayed in Snowville, UT. I had breakfast at a place called Mollie's. I ordered bacon, scramble eggs and hash browns. I asked very nicely the hash browns to be brown. It took 55 minutes to get my order and the girl cooking could not get ANY brown on the hash browns.
