Casseroles aren’t my favorite, but they’re quick and we’ve got kids going every which way.

What are your favorites? Let’s get some ideas rolling.

I've always liked shepherds pie, with ground beef, venison or the traditional lamb. Lately I make it "cajun style" with some cajun seasoning.

Broccoli or Green bean casserole. Holiday meals in the south you are going to get one of these. I like them both.

MIL’s broccoli/rice casserole. Been craving some. Has Pet milk, cream of chicken, cream of celery, fresh broccoli and rice.
Elementary School truism: What’s the difference between broccoli and a booger? Kids don’t eat broccoli. One of my cafeteria managers told me this.

Girlfriend makes a chicken and stuffing casserole that's pretty good. Chicken chunks, cream of mushroom soup and stuffing on top.

I don't know what you call it...maybe, 'Support the German Farmers Revolt' ...pork chops, scalloped potatoes, layered in tons of onions, maybe a few cabbage leaves, sour cream...the usual spices, black pepper, thyme, sage. The important thing is to avoid any recipe that calls for canned soup mix, IMO.

I don't make them as "dinner". But, I like making casseroles with vegetables for side dishes. Here are a couple of them.

First one is with broccoli.

1 package fresh broccoli chopped (pack tied together with a rubberband, or you can use 2 pkgs of frozen. This time I used fresh and chopped it up. Had gotten a good deal on sale.)
1 medium onion chopped
2 eggs
4 ozs of grated cheddar cheese
2 ozs of grated swiss
4 heaping tbsps of Hellman's Mayo
1 tbsp of Parmesan Reggiano sprinkled in
1/4 tsp of red pepper flakes
1/4 tsp of ground cumin
sprinkle the top with Hungarian hot paprika (you can use sweet, if you don't want the heat)
pinch of salt
fresh ground black pepper

Mix everything together and bake at 350 for 1 hour.

I also make this with yellow squash and zucchini mixed, or the same by themselves. You can use cauliflower, too. If you use fresh vegetables, you have to drain off some of the water while cooking.

Not big on taters…

Seem alot of casseroles have taters…

I may like the king ranch..

Cheesy potatoes and ham casserole. Like to throw in onions and peppers too sometimes.

Not sure if this counts as a casserole but..

Fry up about 12 oz of Polish kilbassa (sp?) with 1/2 an onion, diced.

Add a can of diced 'taters, or fresh diced 'taters if you're not lazy.

Add a little Jane's crazy mixed up seasoning. Or your favorite seasoning salt.

Cover with about a half inch of sour kraut.

Cook for about 1/2 hour longer on medium heat.

Pretty good for quick eats!

My wife's tator tot hotdish (casserole for you heathens ~ grin) made with creamed corn.

Do NOT put green beans in it. Do NOT put mixed vegetables in it.
