It was good. New to me recipe so this was a tester. I've got 4 more big roasts I will start tomorrow in the brine...

Good chance there will be a Reuben soon....

I started making it last year. Don’t know why I waited so long. Stupid easy. Wife even likes it. We use Hank Shaws dry rub recipe.

Did some research and used this one. Brine and pastrami recipe including rub followed. Wet brined 7 days. It says optional but I did use a bit of apple cider vinegar in brine. I can't imagine a better product but I'm open. I'm gonna dream about this [bleep] for weeks. [bleep]..
