I got 9 out of 10 missing the one about that foreign BBQ stuff grin
Posted By: petr Re: How well do you know BBQ? - 06/20/09
missed one...woman ques.

I got six out of ten.

When I think of BBQ I think of the pulled pork sandwich where the pork was cooked in a pit with, I guess, hickory.

I think there are plenty of people that would take umbrage to some of their answers.
The answer to question #1 should be "none of the above".
Q;What is the most popular food for BBQ?
A: Burgers

uhum
I thought the quiz said it's not "BBQ" unless you baste. Apparantly the twits at MSN don't know the difference between BBQ and grilling.
Must be a damolecrap BBQ site. grin

Given it's them I'm surprised they didn't come up with tofu sick
Any twit who would even include that question is patently unqualified to even spell BBQ. There is as much difference between grilling and barbecue as there is between frying and changing your engine oil.

"Barbecue Grill" is a complete oxymoron.

Yeah, I said pork ribs on that one.

I grill,I don't have time to BBQ(a 3-4 day process I understand)

I'm pretty sure it isn't possible to BBQ north of the Chesapeke Bay or east of the Delaware River, something about barometric pressure,I would love to actually BBQ but I'm sure it's illeagal in NJ for some reason.

You can Q Rick , it's tough up in the nort east but you can do it.
Next door neighbor just did around 120#s of pork butts and beef brisket yesterday and last night for a party today.
Dang wind shifted and I woke up this am drooling from the smells coming in my window .

If they think one BBQs a burger they have some learning to do.

BBQ is ribs, brisket, shoulder and chicken.

One grills a burger!

In that cased I would Fuhgettaboutit. I mean, can ya see Tony Soprano with a hickory fired offset ??? laugh

The origin of the meat may be questionable as well.

As far as the test went, I scored a dismal 6. Don't remember anythin' 'bout yakitori during my KCBS certification an' burgers damn sure ain't "Q" by any means.Mustard in NC ??????? I think them good ol' boyz dowm thereabouts would soak somebodys haid inna bucket of vinegar for such talk.

The correct answer for the most popular day to BBQ is everyday.

Period. smile

Don't know about the test, but every time I think I know exactly what I'm doing when barbecuing something new happens to surprise me.

I'm not believing that, Sam, I think you have things under control.
In addition....

Let's see if I got this straight.
Q What is BBQ? A Slow cooking over coal or wood, basting throughout.
Q How do you clean a BBQ? A Turn the heat up for 10 minutes a scrap with a metal scraper.

How do you turn up the heat for 10 minutes? Oh, gas!

A good grate is like a cast iron skillet, a good non stick layer of carbon. Never clean with high heat.

No need to even look at it. Anyday--anytime I'm up to the real Pepsi challenge. Also, saw what I needed to from the posts. smile

Rocky, again you're 100% correct.

Pugs,

Great topic btw!

Perhaps we need to make up our own test?

Question (1) What are the four major BBQ types in the US by region?

OK, I'll bet there are more but I think of the big four.
Posted By: Sassy Re: How well do you know BBQ? - 06/25/09
Ribs, Beef, Chicken and Pork!

You mean that isn't the right answer? laugh
Posted By: Pugs Re: How well do you know BBQ? - 06/25/09
Well, I was thinking Memphis, St Louis, North Carolina and Kansas City but South Carolina might also fall in there.

Your answer is fine too Sassy, assuming of course you bring some to the pig hunt!
Posted By: Sassy Re: How well do you know BBQ? - 06/25/09
Not sure about bringing bbq but have been thinking about bringing pickled eggs.

I'm attending that hunt! Cannot wait.

Pugs those are the 4! In fact you can even drill it down another step in the case of SC (and others) because the emphasis is put on the meat with the sauce making the regional determination. I have a map and history of this according to SCBA somewhere. I'll try to locate and post. As far as competitions go for the most part BBQ is pulled pork (especially and always in SC). Some SC events do whole hog and ribs. But never briskett and chicken like KCBS and MIM do.

For me it's more about being a true Pitmaster cooking with natural fuels only and putting all the focus on the meat versus sauce. In fact, gas fuels as well as pooling of sauces are prohibited by many sanctions. I also wish they would eliminate the garnish. Has no place in competition IMHO.

The four sauces in SC are :

Mustard, Vinegar, Tomato and Pepper based.

Needless to say other regions use this same guideline for sauces.

For now anyway you spell it BBQ is a noun..... smile

That would be a neat map to see!

I'm not a fan of the NC Vinegar based stuff but maybe I've never had it done well. I'm a big fan of Memphis dry rubbed ribs, no sense is meshing up good hickory and lump flavor with anything more than a good rub. I do allow a little sauce for pulled pork but it better be good! grin
