Google Lewis & Clark's chili! I am not a big fan of chicken, but this white chili rivals my own regular venison chili. My wife makes it, I love it! Awesome. Sorry, i am new to posting

Not exactly white but it does use white beans and chicken.......
we use either chicken breasts cooked in a crock pot, or a rotisserie chicken that have been mechanically separated by human hands (mine)

Ingredients
1 pound of ground chicken
1 can white navy beans, drained and rinsed
14.5 oz can fire roasted tomatoes, drained
4 cups chicken broth
� - � cup buffalo wing sauce (start with � cup and add more at end if needed)
1 package ranch dressing mix
1 cup frozen corn kernels
� teaspoon onion powder
� teaspoon garlic powder
� teaspoon celery salt
� teaspoon dried cilantro
� teaspoon salt
8 oz cream cheese
Blue cheese crumbles (optional)
Instructions
Brown ground chicken until fully cooked, place in crock (or brown ahead of time and store in fridge until ready to assemble)
Add remaining ingredients except for cream cheese and blue cheese and give it all a stir to combine
Add block of cream cheese on the top and cover
Cook on high for 4 hours or low for 8
Stir to incorporate cream cheese and add additional wing sauce as desired
Top individual bowls with blue cheese crumbles if desired

this isn't my picture but the results are similar.

That actually sounds and looks really good and there's nothing wrong with white chili. I actually like it.

BUT there's no chili's or chili powder in your white bean soup!! laugh

back in I think 2005, I created this recipe for a local Tempeh company. They are still handing out the recipe, and the hippys and liberals here just love the chit. I tried it once, and it's not bad, but again, it's NOT REALLY CHILI. laugh

Tempeh and White Bean Chili

Ingredients
16 oz Fresh Organic Tempeh
One 15 oz cans Great Northern Beans
One 15 oz can diced tomatoes with liquid
One tsp each, Cumin, Red pepper, salt, black pepper
� tsp each garlic powder, thyme, Mexican Oregano
One Medium Onion, diced
One Green bell pepper, diced
Two Poblano Peppers, diced


Cut thawed Tempeh into 4 ounce portions. Bush thawed Tempe with olive oil, and saut�, until browned, turn and saut� the other side.
Drain on paper towels, and cut into � inch cubes.

Add two Tbls olive oil to saut� pan, and saut� the peppers and onions. Add the spices, chicken stock, Canned tomatoes, and beans. When slightly reduced, add in the Tempeh pieces. Mix well,

I used to make a White "Chili" that was outstanding. I'd have to look for the recipe, if I still have it.

From memory-
Brown diced chicken breast in a heavy stock pot with a couple tbs of oil. Remove and set aside. Saute diced onion, garlic, and jalapeno in pot. Remove.

Same pot, add oil and flour for blonde roux.

Chicken stock and 1/2 and 1/2 go in. Navy beans, meat and veg go in. Salt, pepper, chili powder.

I want to say I used a bit of cheese as well, but don't recall?

I gotta go find that recipe now!

Chili, not really, but most really don't care as much as some here do.

Boil chicken with normal stock veggies, cut up. Remove chicken, shred, set aside. Add dry beans to stock for quick soak or cool and let set overnight. Add fire roasted green chile strips (Anaheim, jalapeno, pablano, Fresno, what ever you like) tomatillos, and fresh cilantro. Heat till beans are cooked or hot depending on what you started with. Add chicken back in, add crema agria or sour cream in pot or just put it in your bowl. Add cumin, oregano, or any other spice to suit your taste.

When all is said and done, think chicken soup meets chile verde and white beans and sour cream.

Oh, You mean something like this?

Made this today starting with recipe posted prior and a few additions.

additional ingredients were..

2 more garlic cloves
little bit of chili powder
little bit more red pepper flakes
1/2 to 1 cup more organic chicken broth
1/2 cup half and half
few drops of Sambal here and there
1 link hot chicken sausage

Pretty much Local. As with most dishes, we don't do many the same way twice. But they always taste familiar!

I know you like to cook, too. You build this result in layers with as many fresh ingredients as you can, given availability.

I went to 3 markets today to get the really good stuff.

If I offer a gallon of this to friends next door, it is gone instantly.

No lip turned up just doesn't appeal to me. You can have mine Sean. I can eat quite a few things most will turn down. The appearance of that with cream in it just doesn't square with me for some reason.
