Going squirrel hunting in the morning and looking for some new ideas. I usually soak 'em in buttermilk and hot sauce then fry 'em up. Any suggestions....

I have never enjoyed the dish, but my dear mother used to talk of squirrel, and dumplings.

The dish works well for old tough chicken, how bad could it be?

quarter them, (after cleaning and skinning, of course), and braise them in the oven with some onion, cellery and carrot. Discard the veggies. Meat should be tender after an hour or so.
I then debone the pieces, and add to a pot of brunswick stew, or make a Squirrel pot pie.

thats the way i do it too. i add some chicken broth to the braise. everyone always says "tastes like chicken".

I like squirrel and dumplings and the dumplings are easy to make, but if you don't want to, Mary B's frozen dumplings are good. Just boil your squirrel and season, then remove and cool to take out the bones. Cook your dumplings in the broth and then add the meat back. Real easy. miles

Stuff the cavity with onions, carrots, celery, and some butter. Season a with salt and peppers, garlic, etc. Wrap in foil and bake low ( 275-300) for a couple of hours.

Works good with the large grays we have out here, if smaller just braise and pick meat off like others have suggested.

Thanks to everyone for the recipes! I got more recipes than squirrels this morning but I will be ready for the next hunt. Woods were quiet this morning.

Dan, that acreage my son bought recently is over run with squirrels. Looks like they have not been hunted in years. Along with the ones I kill in my back yard, this should be a banner year for taking tree rats.
