Plus:

1 Large Onion, Diced
2 Small Bell Peppers, diced
4 cloves garlic, minced
1/2 cup Ketchup
1/4 cup Tomato Paste
6 ounces Tomato Sauce (marinara)
6 ounces Chicken Stock
2 T Worcestshire
2 tsp Dijon Mustard
1/2 Cup Brown Sugar
1 T chile powder
Big pinch Crushed red pepper

Brown the meat in Olive oil and butter, remove. Saute the Onion and Peppers in Butter and Oil, add garlic at the end to avoid burning. Add the meat back into the Onion/Pepper pan will the balance of the ingredients and simmer a bit.

Taste for salt and pepper and even the Brown sugar. I like it a bit sweet....

That's a good lookin' pronghorn. I really like the tall, heart-shaped horn configuration with good mass and deep prongs. The vittles sound good and look good too. Nice work all the way around.
