Just finished...have potatoes, but no veggy and only squash available for a veggie....suggestions ? something w/ Parisian maybe ?
Whatever you do, don't spoil the meatloaf by adding zucchini.

You can add finely chopped onion, carrot, celery, peppers, tomato, broccoli, potato, parsley, ...
Slice the zucchini and saute in evoo with a little salt, pepper, garlic. Simple. Works very well with zucchini.
I always like zucc on the grill. OO, S&P, grill hot and leave a bit of snap.

Or slice an onion with the zucchini and saute with OO, S&P, and a bit of red pepper flake. Finish with feta.

You talking about putting squash inside the meatloaf, or squash as a side?

If in the meatloaf- absolutely cook it 1/2 way first.


If on the side- butter/salt/pepper in a cast iron skillet. Cut the zuchs in 1/2 inch disks and on Med high heat cook them face down and get some color- flip and a couple more minutes and you're done
