Just canned over 40 pints of freshly caught albacore

last year canned quite a bit of deer pheasant elk.

some olive oil, a bit of kosher salt and fresh taragon, 100 min at 10 lbs ( sea level)

good stuff

looks good to me.i've thought about trying to can some catfish.
