Guys, doves and their piggish gullets have simply overrun my bird feeders lately. ARRRRRRRR !!! Time to thin the herd down to manageable levels as many of my little friends just can't get in to feed. mad

Looking for a few recipes and prep methods if ya care to share please.

wrap breasts in bacon..secure with toothpick....grill slowly until bacon is done....small swipe of barbeque sauce at the end.

bread in flour and fry....make gravy...smother for 30 mins or so until tender....serve with rice and biscuits...

I've eaten doves for many years and had them several different ways but you can't beat fried in my opinion. Good soak in buttermilk, overnight is even better. Pour off the buttermilk marinade. Whip up an egg or two in some fresh buttermilk or milk, dunk, roll in flour seasoned with salt, pepper then fry slow until crust is golden brown. Serve with homemade biscuits, brown or tomato gravey over rice. Simple but delicious and don't forget the sweet tea. You can also marinate birds in zesty Italian dressing, wrap in bacon and grill, don't over cook! Even fancier add some cream cheese, onion and thin slivers of jalapeno.

Keep the whole dove, gutted of course. Then stuff the cavity with jalapeño peppers, onions and some white chesse, wrap with bacon and keep it all together with a toothpick or two, put them on the grill and you have some great eats.

Crockpot Doves

In a large crockpot add the following:

8 - 10 skinned breasts
3 - cloves of garlic, chopped
1 - medium onion, white/red/Videla/yellow, chopped
1 - 28 ounce can diced tomatoes with Italian spices
1 - 10 1/2 ounce can cream of mushroom soup
1 - 7 ounce can chopped green chiles, fire roasted, hot, or mild
1 - cup sherry, I like Harvey's Bristol Cream
1 - teaspoon cummin
salt & pepper to taste

Cook for 8 hours on low or 5 hours on high

Serve over rice, noodles, or the pasta of your choice

To me, dove tastes lousy. Seems the case elsewhere given all the "doctoring" being done to the meat.

Place a jalapeno slice on breast and then wrap with bacon and secure with toothpick....grill slowly until bacon is done....small swipe of barbeque sauce at the end. Then throw the dove breast away and eat the bacon/jalapeño/BBQ sauce combo.

I actually LOVE the flavor of dove, though I understand it is too gamey for many folk.

i've eaten some dove stew that could be pretty good. probably similar to the crockpot dove posted above.

pour it over rice, or just eat it out the of the bowl with whatever kind of bread ya got.

grilled dove around here is treated as a special treat, but honestly the smoked bacon wrapper is what carries the load.
