I got my wild turkey smoked professionally. The boss said to go online and look up some recipes. Pretty much all I get is instructions on how to smoke the turkey. Not much on what to after that.
The last time I had this done, (like budda,' only smokey) we took it to a family gathering and we all just nibbled on it. This time it is just us, and that makes for A LOT of nibbling.

I smoke pre-basted turkey breasts in my smoker oven. I just use a standard "rib rub", or sage+salt+pepper. I lift the skin and apply the seasoning and leave the skin on to seal in moisture. I generally use oak, sassafras, or alder wood. I cook to 160F, and it cooks over to 165. The skin is really rubbery, so I toss that. I usually use it for lunch meat, or a turkey salad. I think the smoke makes it ten times better than an oven turkey.

Turkey and wild rice soup (make the stock with the carcass)
Turkey vegetable soup
Soft tacos with cabbage/slaw
Casseroles
Club sandwiches

Pretty sure there are online recipes for all of these. Also, anything you do with chicken you could do with turkey.
+1 on using alderwood to smoke turkey, apple is good too. Other than a sandwich or two I make turkey salad out of my turkey leftovers.
I am a BIG sucker for a turkey sammich. Mayo, lettuce, swiss, bread & butter pickles on fresh multi-grain bread. Heavenly.

I've made turkey casseroles that came out well with broccoli, onion, cheese, egg noodles in a cheesy cream sauce. This is one where you can add a little Asiago, if you like Asiago. I do. It plays well with the smoked turkey flavor.
I did one last year where i brined the turkey for 24hrs with a whole mess of cut up granny smith apples, some brown sugar, pepper, tarragon, and some other stuff (dont have the recipe in front of me at the moment, but there are many similar online).

Then stuffed the butt with some apples and smoked with applewood. Came out REALLY good.

What to do with it once its done? Your nose will tell you what to do!
What to do with it after it's smoked? After it rests, just carve and serve as usual. There's no sense giving you recipes for leftover smoked turkey...

This is the first thing that came to mind. Now I'm hungry but have to shovel snow.
I use my Weber Kettle Grill with indirect heat and apple wood. I get great reviews from family and deer hunting buddies. Takes about 3 hours, finish in the oven if required. Biggest turkey you can fit on the V rack under the lid is about 12 lbs.
Hot Turkey Sandwich comes to mind this time of year....
Slow cooked with mesquite wood. Damn good
